The name of the title includes two things Lauki(Bottle Gourd) and Burfee(An Indian Sweet), when they both come together, gives you a new taste to your taste buds. The best thing is eating your favorite food being conscious about your health and Diet. The Recipe of “Lauki Burfi” came from the books of Jain Cuisine, the cuisine which allows you to be a pure vegetarian and yet enjoys delicious dishes. Generally, Jains do not add Onions & Garlic in any dish or recipe. Apart from this, you’ll be glad to know that Jain Dishes are truly Delicious and Easy-to-prepare at home for your family & friends. One such dish is “Lauki Burfi” which can be prepared at home on special occasions, family functions & Family Pooja. The Main Ingredient of Lauki Burfi is Bottle Gourd, which is not so favorite of everyone, but I brought you a way to make this vegetable so delicious and your kids will find an irresistible sweet. According to the pediatricians, this vegetable is full of nutritious and will bring wonders for your body. Small Replacement of some ingredients can turn this sweet healthy for Debiatic Patients. Most of the people think Jain dishes are with Dull and Bland flavors, but literally, this will cleanse your whole body and is healthy for the body.

Course: Indian Traditional Sweet
Preparation time: 15 Minutes
Cooking Time: 40 Minutes

Ingredients

1 and ⅓ cup Grated Bottle Gourd
¾ Cup & 1¼ tablespoon Khoya
700 ml Full Cream Milk
1⅓ teaspoon Desi Ghee
⅓ cup Sugar
1⅓ teaspoon Green Cardamom Powder
1 pinch Salt
Almonds As required 


Procedure

To prepare this delicious Sweet, put a Deep Bottom Pan or Wok(Kadhai) and Add Full cream milk in it & turn the knob on medium heat. Bring the milk to a boil, then add grated Lauki/Bottle gourd in the Pan. Let it simmer for 10-15 minutes


Now, add the sugar in the Pan and mix well. Stir Occasionally & cook until the milk gets totally absorbed by the Bottle gourd and bring it to a thick consistency. Afterward, Add Khoya & Desi Ghee along with Cardamom powder and stir to mix well.





Meanwhile, take a Large Thali or Tray and grease it with little ghee. Once the milk gets totally absorbed, Turn Off the knob and transfer the Halwa into the Greased Thali or Tray. And spread the mixture evenly on the Thali or Tray. Garnish the mixture with Chopped Almonds & Pistachios or Sprinkle from the top. Keep it aside & let the Halwa cool at Room Temperature.




Once the Halwa gets cool enough, transfer the Tray or Thali to the refrigerator for 4-5 hours. Take the tray or thali out of the refrigerator and cut them into the desired shapes. And serve immediately.
